A peeler and a julienne shredder Servings 12 people Servings 12 people Ingredients 1 kilo green papaya (peeled and grated into thin strips cucumber or carrot be substituted 15 cloves garlic 12 - 15 birds-eye chillies 450 grams long beans (cut into 2 cm pieces) green beans can be substituded 175 ml fish sauce 175 ml lime juice 60 grams palm sugar 650 grams Cherry tomatoes 170 grams peanuts (roasted) 25 grams dried shrimp optional 50 ml anchovy sauce optional Instructions Put the garlic, chilies and long beans (or green beans into a mortar and pound roughly. You may not do this quantity in one go, so do it in batches. Add the papaya and pound again to slightly bruise the ingredients. Then add the fish sauce, lime juice, palm sugar and dried shrimps (if using) and stir together using the pestle and a spoon until the palm sugar has desolved. Add the anchovy sauce (if using) and tomatoes and give it one pound and a good stir to combine. Then add half of the peanuts and mix together.
