This is one delicious treat!
Drink this, iced in a glass, or serve it very cold in shooter glasses after your dinner party. You can use the soaked and boozy fruit you are left with in desserts.

Ingredients
- 500 grams loquats stoned and halved
- 450 grams caster sugar
- 750 ml dry white wine
- 300 ml vodka
- 3 cm orange peel
Instructions
- Put all the ingredients except the vodka into a large saucepan and bring slowly to the boil, stirring a little to help the sugar dissolve.
- Once boiling, take the pan off the heat.
- Put the contents in a bowl or a large mason jar that you will be able to cover. Pour the vodka over and leave in a cool, dark place for 10 days.
- Strain the liquid through a sieve and then filter through a cheesecloth and pour into some clean, sterilized bottles.
- Seal tightly and leave in a cool, dark place for a month before serving.
Recipe Notes
You can substitute loquats for apricots.
