Lemon Granita for Hot Summer Nights

Lemon Granita Shooter with Pipette

 
Granita’s are very easy to make and great to serve between courses during your dinner party. I used to serve them before the main course and served them in shooter glasses. If you can get hold of ‘pipettes’ and fill them with a gin and tonic mix or rum coconut mix, your guests will be nicely surprised! You can contact me if you want tips on where to buy the pipettes in your country.

Ingredients
Instructions
  1. Heat the water and the sugar in a large pot.
  2. Bring to a boil and simmer for a few minutes. Keep stirring until the sugar is dissolved.
  3. Add the lemon juice and lemon zest.
  4. Cover and let steep for 20 to 30 minutes.
  5. Strain the mixture into one plastic container that will fit into your freezer.
  6. Let cool to room temperature, cover and freeze until partially frozen, which should take about 2 hours.
  7. Take the partially frozen granita out of the freezer every half an hour or so and scrape the surface of the partially frozen granita loose with a fork.
  8. Continue doing so until you have a fine granita structure.
